FAQ about Chicken curry sausage | 500 g

How to cook chicken sausage without drying it out?

The butcher's golden rule is never to pierce the skin. Sear your sausages over medium heat, whether in a pan with a knob of butter or on the barbecue grill. A gentle cooking time of 10 to 12 minutes allows the heat to penetrate to the core while keeping the juices trapped inside the natural casing.

Is the curry flavor very strong or spicy?

Our curry blend is first and foremost aromatic. We use mild, roasted spices such as coriander, fenugreek, and turmeric. The goal is to flavor poultry meat and give it a beautiful golden color, without masking the taste of the meat or burning the palate.

What cuts of chicken do you use for this sausage?

Unlike industrial products often made from scraps or overly dry breast meat, we exclusively mince chicken thighs. This muscle is naturally marbled, which gives the stuffing a tender texture and enough fat to moisturize the meat during cooking.

What type of casing do your poultry sausages have?

We stuff our chicken meat in a casing made from real sheep. This very thin natural casing ensures a perfect crispiness when tasted and retracts uniformly when heated, unlike synthetic casings.

Can I freeze these curry chicken sausages?

Yes, they freeze very well. Place them in an airtight container or vacuum-seal them to prevent freezer burn. To thaw, let them rest for 24 hours in the bottom of your refrigerator so that the poultry fibers slowly regain their suppleness.

What sides should I serve with this curry sausage?

Its warm and spicy notes pair perfectly with grilled vegetables like zucchini or peppers. For a heartier meal, lightly buttered basmati rice or a warm potato salad with fresh herbs will balance the curry’s aroma.
